An acid (from the Latin acidus meaning sour) is traditionally considered any chemical compound that, when dissolved in water, gives a solution with a hydrogen ion activity greater than in pure water, i.e. a pH less than 7.0. That approximates the modern definition of Johannes Nicolaus Brønsted and Martin Lowry, who independently defined an acid as a compound which donates a hydrogen ion (H) to another compound (called a base). Common examples include acetic acid (in vinegar) and sulfuric acid (used in car batteries). Acid/base systems are different from redox reactions in that there is no change in oxidation state. Acids can occur in solid, liquid or gaseous form, depending on the temperature. They can exist as pure substances or in solution. But in either case, it is to make sure no water is left in the apparatus which wd dilute your titration, giving you an erroneous result. If the pipet is wet, rinse it with the sample being tested. Q. Typically, foods are tested for fat levels but different testing methods can give very different results. For example, I saw the results for fat that were tested by acid hydrolysis and petroleum ether extract and noticed about a 10 fold difference. The acid hydrolysis test showed a fat level of about 10%. Where the petroluem ether extract test showed a level of about 1%. Does this have something to do with testing for total fat versus free fat?
