Q. What types of cheese are best to make grilled cheese sandwiches? I am open for ideas that are common or gourmet types of sandwiches fillings.

A. The Polynesian resort at Disney World makes a grilled cheese sandwich that they call the "grown-up grilled cheese" that has Cheddar, swiss, and blue cheese. It is fantastic. They actually use sunflower seed bread as well for another twist. As long as you don't use too much blue cheese, which would overwhelm the other cheeses, this combination is delicious.
